An Easy Dinner Solution for Busy Moms

I am horrible about coming up with creative dinners. I don’t really like to cook, and I’m pretty much a disaster in the kitchen anyway.

And it’s not that I can’t cook. I can follow a recipe to a T. It’s that coming up with something different to make all the time is pretty far down on my list of priorities. I’m a boss mom–I’m juggling a lot. And some days I’m checking out mentally by the time dinner rolls around.

Enter Sun Basket. Not only are the ingredients fresh, healthy, and chemical free, but it’s everything I need to make a killer meal in one box. I didn’t have to waste time on Pinterest trying to find something that everyone liked. Their website listed what recipes they have available for what week, and I just had to decide between those. To say it’s a simple process would be an understatement.

The Delivery

I was told that the ingredients would be delivered to me on a Thursday and they showed up via UPS with no problem.

It came packaged in an insulated box with biodegradable ice packs and step-by-step instructions on how to recycle it all printed directly on the packaging. It even said that the material was recyclable in big letters, which is amazing because the city sanitation guys can be pretty strict.

The ingredients were all clearly marked, so I knew exactly what they each were and what recipe they went with. That left little room for me to screw it up!

The Ingredients

Sun Basket boasts about their amazing ingredients, and they have every right to. This was some amazing produce! I was also impressed by the high quality meant I was sent.

For the first recipe I tried, the Paprika-Spiced Chicken with Spinach Salad and Sweet Potato Fries, I received 3 sweet potatoes, 4 boneless skinless chicken cutlets, paprika, 2 shallots, a ½ head of radicchio, diced pancetta, sliced almonds, Aleppo chile flakes, red wine vinegar, baby spinach, and mixed greens.

For the second recipe,  the Steak Fajita Lettuce Wraps with Cucumber-Radish Salsa, I received 2 red bell peppers, 1 yellow bell pepper, 3 scallions, 1 jalapeno, 2 bags of Artisan corn tortillas, 1 Persian cucumber, 2 red radishes, cilantro, 2 limes, 1 romaine heart, top sirloin steak strips, steak fajita spice blend (ancho chile powder, granulated garlic, cumin, dried oregano), tomato paste, and greek yogurt..

And, as I said, everything was clearly marked. So there was no confusion when I went to make the recipes!

The Recipes

Inside the box with all of the glorious ingredients was a step-by-step, easy to follow recipe guide.

It includes pictures of what the end product should look like. For an experienced cook, this may not be necessary, but I like to know I’m at least on the right track!

In each step of the recipe, the ingredients are also in bold, making it super easy to see what you need and what’s coming next. It would be pretty difficult to mess it up!

The most amazing part of this, though, is that they highlight the steps that your kids can help you with! I love anything that encourages family involvement, and this little thing really was the silver lining for me!

They also provide Chef’s Tips in case you wanted to switch things up a little. And this is great because whenever I stray from a recipe, I start screwing things up. So for the Paprika Chicken recipe, they included a tip on how to turn the recipe into a main course meal, and for the Steak Fajita recipe, they added different ways to heat the tortillas.

 

All in all, I was highly impressed with the quality of ingredients that Sun Basket sent me. I also loved the recipe choices for the week, and I look forward to trying more in the future.
